Cornflake Crusted Chicken

Ingredients

 

Fresh Chicken Drum & Thigh Combo or Fresh Boneless Chicken Breast

 

Western Beef Corn Flakes

 

2 Yams

 

2 Tablespoons Delicioso vegetable oil

 

2 eggs

 

Salt

 

Pepper

 

 

 

 

Instructions

Preheat your oven to 400 degrees C.

 

Cut 2 yams into strips, then lightly coat

with oil. Season with salt and pepper.

 

Place the strips of yams on a baking

sheet and bake in the oven for 30

minutes, or until golden brown.

 

While the yams are baking, crack 2 eggs

in a small bowl and whisk.

 

Measure out 2 Cups of Western Beef

corn flake cereal and place in a separate

bowl.

 

Using your hands, crush the corn flakes.

 

Taking one piece of chicken at a time, dip in the egg mixture first, then roll in the

cornflakes. Make sure the chicken is completely covered.

 

Repeat with the remaining chicken cutlets.

 

In a medium skillet, heat 2 Tablespoons of oil over medium heat.

 

Once the oil is hot, place the coated chicken in the skillet. Cook for about 6 minutes,

then flip and cook for an additional 6 minutes.

 

Once fully cooked, remove from heat.

 

Remove yam fried from the oven and serve with the chicken.
