Chicken Salad Sandwich

Ingredients

 

2 Extra large avocado

 

Jumbo plum tomatoes

 

Fresh rotisserie chicken

 

Sugardale or Oscar Mayer bacon

 

3/4 cup Hellmann’s mayonnaise

 

Wonder bread

 

Fresh picked scallions, chopped.

 

Farm Fresh can of corn

Instructions

 

Heat a medium skillet on the stove, over medium-low heat.

 

Add slices of uncooked bacon to the skillet and cook until crispy and brown.

 

Remove from skillet and set aside.

 

Slice the rotisserie chicken into chunks and place into a bowl.

 

Carefully cut, pit, and dice the avocado.

 

Chop the scallions.

 

Add 3/4 cup Hellmann’s mayonnaise, Farm Fresh corn, avocado, and scallions to the chicken.

 

Cut the bacon into small pieces and add to the chicken salad. Mix until fully

combined.

 

Lightly toast 2 pieces of bread in a toaster or oven.

 

After washing, slice the tomato and place on toasted bread.

 

Add a heaping spoonful of chicken salad.

 

Top with salt and pepper if desired.
